In the coffee capital of Melbourne, a fitout to stand out from the rest is key to any hospitality venue's success. For Winston Press, an upmarket bakery in Preston, they had an intricate café fitout design that required meticulous planning and construction expertise to deliver across the 100sqm space. Read on to see how we liaised with various stakeholders and found smart solutions collectively to build a bespoke yet functional café fitout 

At Canopy Fitouts, we understand that fitting out spaces extend beyond the installation of finishes and materials – especially for café fitouts. Our involvement in the project covered the coordination of permit applications to construct an entirely new bathroom and external fascade. To construct a new bathroom in the basement, we had to ensure there was sufficient plumbing to make it functional. And in the same way, fitting a bi-fold window into the exterior wall required precise measurement and specification.  

The curved features and industrial finishes were paramount to the mood and flow of the cafe. Due to the complexity of the joinery, however, building these required additional construction plans and well-versed tradesmen. We were able to utilise our in-house interior architects to draw up additional templates to aid the joiners in their assembly. Furthermore, we arranged for metal benders and concreters to construct the concrete pillar displays into the café's fitout

Like with all hospitality fitouts, sufficient air ventilation is required to make the space operational. To carry this out, we had  a mechanical ventilation plan drafted which allowed for the air vents to be connected to a concealed room outside of the tenancy – without compromising the look and feel of the café fitout

This space is fitted with a full commercial kitchen, allowing for the café to transform into a humming restaurant when needed. Commercial kitchens are tricky to fit in tight spaces and it is important that you have the right team onboard to guarantee a successful delivery. So, our team arranged for the gas appliances installed at early phases of the project which guaranteed sufficient time to submit the required application to Energy Save Victoria and curb delays.  

When delivering fitouts during drastic material shortages such as that of the Christmas break, it can be challenging to complete the project on budget and on time. Again, we were able to leverage the expertise of our in-house design team, to source alternative tiles and paint finishes where they would otherwise delay the fitout completion.
